This time I wanted to try something new for Easter. Simnel cake caught my eye because it seemed very nice and I'd always wanted to try to bake a fruit cake. That's why I chose this recipe.
This classic fruit cake has become traditional Easter cake, but originally it was given by servant girls to the mothers when they went home on Mothering Sunday. The 11 marzipan balls represents the eleven apostles (not including Judus). There is also a lovely layer of marzipan inside the cake.
